A lot of Houston housing stock sits on a slab, which changes how a leak is found and repaired. There is no crawl space to inspect, so the work starts with isolating the line before anything gets opened up.

Commercial plumbing

Restaurants, salons, small offices, warehouses, retail and multi unit buildings have different constraints. Grease handling, floor drains, mop sinks, backflow devices, commercial water heaters and work that has to happen outside business hours.

Do I need to know what is wrong before I send a request?

No. Describe what you see and hear. Where the water is, which fixtures are affected, when it started, and whether it is getting worse. That is enough to route the request and for a plumber to know what to bring.

Can one visit cover two problems?

Often yes. List both in the request. A slow drain and a dripping faucet are usually one trip. A sewer camera inspection and a water heater replacement are usually two, because they need different equipment.
